Wedding barbecue with Mediterranean flavours

Our most recent highlight was Charlotte’s wedding reception in Hertfordshire, which featured some fantastic flavours from around the Mediterranean.

Summer is upon us (allegedly) and many clients are booking barbecues with us.

Charlotte had waited until restrictions lifted before getting married, which meant she and her new husband were able to celebrate with twenty-eight friends and family members. Dinner was served at two tables of fifteen, with beautiful white china, gold cutlery and olive wood boards as befitted the occasion. In the centre of each table was a fondue pot, where guests could enjoy communal eating at long last.  

The menu was planned around Charlotte’s favourite foods. She had come to us with lots of clear ideas about what she wanted, and Steve worked closely with her to develop them into a magical menu worthy of her special day.

A delicious starter of roasted vegetables and Milano salami included the memorable addition of a cheese fondu with sourdough bread for dipping. Mains came straight from the barbecue, featuring a choice of marinated lamb chop or pulled shoulder of lamb.

Steve created special variations for the vegan guests, including tomato bruschetta and wild mushroom arancini – Italian-inspired deep fried rice balls.

Side dishes included colourful crudites, spicy Asian slaw, hearty bean and pasta salad and more.

It was such a privilege to be part of Charlotte’s special day – I’m sure you’ll join us in wishing her and her new husband Will a long and happy life together!
